Acidity in coffee refers to the pleasant, bright, and often tart sensation that brings vibrancy and liveliness to the flavour. It shouldn’t be confused with sourness, which can be a sign of under-extraction or a brewing fault. Think of acidity as the crispness of an apple or the tartness of a lemon—it adds structure and complexity to the coffee's taste profile.

Body, sometimes called "mouthfeel," describes the tactile sensation or weight of the coffee on your tongue. It’s about how the coffee feels in your mouth, separate from its flavour. For example, compare the lightness of skim milk to the richness of whole milk, or the difference between water and juice.
